Lemon Bars

Spring is the best time for fruity desserts. Lemon is by far one of the flavors I most enjoy during this season. Today, I am sharing a sweet and tart lemon bar recipe for those of you who share a love for this flavor profile.

Lemon Bars

Ingredients: Base- 1 cup softened butter, ½ cup of powdered sugar, 2 cups flour, 1 large pinch of salt

Filling- 4 large eggs, 2 cups granulated sugar, 1 tsp baking powder, 6 tbsp lemon juice, 1 large pinch of salt, zest of half of a lemon.

Instructions: Begin by preheating oven to 350 degrees. Lightly grease 2 cake 8x8 cake pans. Make the base by beating the powdered sugar and softened butter on medium speed until combined. Add the flour and salt and beat again until a dough forms. Divide in two and pat until it covers the bottom of each baking dish. Bake for 18 minutes and remove from oven. Allow to cool for 5-10 minutes

​While the base is baking, mix the eggs, sugar, baking powder, fresh lemon juice, pinch of salt and lemon zest in a medium bowl. Pour the lemon mixture over the base. Bake again for 20-25 minutes. Remove from oven and allow them to cool in the pan.

​Cut into squares and dust with powdered sugar. Enjoy!
